I’m so excited that today Sharon from Mom of 6 (yes 6!) is joining me for both Momma Can Cook AND 31 Days of Pie. She is sharing one of her family’s favorite recipes, Toffee Pie.
My family has long been in love with sweet pies. Sure they go for fruit-filled pies too, especially now during the middle of apple picking season, but when I make this delicious toffee pie, they almost cannot wait for it to cool before digging in!
Terrific Toffee Pie
Now I like to make this toffee pie with a homemade pie crust. But I know that my husband would really prefer that I make this pie with a graham cracker crust! You can decide which way to go!
1 1/2 cups all purpose flour
1/2 teaspoon salt
1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch pieces
4 tablespoons (about) ice water filling
1/2 cup of butter, melted
1 cup sugar
1 teaspoon of vanilla
1/2 teaspoon of salt
1 cup flour
1 cup of Heath pieces
Prepare the crust:
Mix flour and salt in a food processor. Add butter and cut in using on/off turns until mixture resembles coarse meal. Add 3 tablespoons ice water and process until moist clumps form, adding more water by teaspoonfuls if dough is dry. Gather dough into ball; flatten into disk. Wrap in plastic and chill 30 minutes.
Prepare the filling:
Mix together the butter and sugar. Add eggs and vanilla and mix well. Add in the salt and flour, mix well and the fold in the Heath pieces.
Roll out your pie crust into a deep-dish pie pan, crimping the sides (I cheated and used a fork!). Pour the filling into the crust, and bake at 325 degrees for 1 hour until beautiful golden brown on top.
Allow to cool (and set up) for 1-2 hours before serving. Serves 8.
