I’ve always been more of a Pumpkin Pie person than a Sweet Potato pie person, but David swears that his mother’s Sweet Potato Pie Recipe is the best. I have to admit that it is pretty darn good.
1 1/2 cups sweet potatoes, mashed
1 cup sugar
1/2 cup buttermilk
1 tablespoon butter, melted
1 egg plus 1 egg yolk
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 1/2 teaspoon cinnamon
1 1/2 teaspoon vanilla
Unbaked Pie Crust
1. Boil three to four sweet potatoes until soft. Peel and mash to get 1 1/2 cups. Put in a bowl.
2. Add sugar to sweet potatoes and mix well. Add buttermilk beat together. Add egg and egg yolk. Add melted butter. Add baking soda, baking powder, cinnamon, and vanilla. Mix well.
3. Roll out pie crust and put in a pie plate. Pour in the sweet potato mixture. Bake in an oven preheated to 425 for 15 minutes. Reduce heat to 350 and cook an additional 30 – 45 minutes. Cool before serving.
Experiment with the sweet potatoes until you learn how to make them the consistency you like, chunkier or smoother.
